Lop Cheong is a chinese pork sausage that i grew up eating at least once a week. It super salty, rich, and actually more firm/dry that a typical sausage, and is closer in texture to a salami. It usually has a mix of spices, and range from slightly sweet to savory and is usually cooked in rice to infuse the flavor into the rice. Check your local asian grocery and check this stuff out, just remember what shelf it was on because you will be back for more.
